Green-ish Smoothie (Dairy-free)
Happy St. Patrick’s Day!
I love the ideas of green smoothies, but after hearing about oxalates in raw greens I was wary. Arthritis runs in my family and I did not want to contribute to any pre-existing conditions I may have had. So I decided to reduce the oxalates by steaming the spinach. The other benefit in this recipe is that the vitamin C helps with iron absorption!
- 1 medium banana
- 4 organic strawberries
- 2 cups packed spinach, steamed
- 1/2 c. whole fat coconut milk (I like THIS brand, because it’s in BPA-free cans!)
- 2-1/2 T. maple syrup
- 2-1/2 t. fresh lemon juice
