Peanut Butter Cookies (GF) Food Your Body Will Thank You For

Tiny confession…I’m not really a cookie person. I created these for my husband, who is, was, and always will be a cookie monster.

Last year, when we fully took gluten out of our diets, I’d resigned myself to the fact that I would just have to make do without cookies. Many of the cookies we can buy locally have ingredients we try to avoid, even if they’re organic: canola oil, soybean oil (allergic!), margarine/shortening (all of which are oxidized PUFAs), refined sugar (my son reacts poorly to it…tantrum central!), or agave nectar (highly processed). My only option was to create my own recipe. That just  left one problem—I’m NOT a baker! Seriously, My last attempt to make cookies (oh, about 15 years ago!) resulted in inedible muffin-ish cookies.

Since my brother-in-law has always been the baker in the family, he gave me a simple recipe to work with. I’m pretty picky about flavor and texture, so it took me a few tries to come up with a soft, chewy, delicious cookie. My colleagues at work were QUITE happy during recipe development. The process of perfecting the recipe even scored me a half dozen pastured eggs from one grateful cookie lover!

Since I developed the base, I decided to have fun and experiment further. I came up with some holiday flavors to entice you to make some easy DIY Christmas gifts. The result were FOUR dreamy cookie concoctions!

Special shout out to Civilized Caveman Creations for reminding me of the importance of ingredient WEIGHT when baking! Perhaps it’s not that I wasn’t born to bake (as I’d always said!), but that baking just requires a little more precision for deliciousness to occur…

Basic Peanut Butter Cookies

You’ll need:

  • 5 oz. coconut palm sugar, approximately 2/3 c.  (affiliate)
  • 1.5 oz. organic grade B maple syrup , approximately 1/3 c. (affiliate)
  • 1 pastured egg
  • *9 oz. organic peanut butter,  approximately 1 and 1/8 c. ( I get make my own from freshly crushed peanuts from my grocery store)
  • 1/8th t. unrefined salt (affiliate) (optional)

*If you use commercially jarred peanut butter, it will have more liquid content and you may have to reduce the maple syrup to 1/2 an oz.. I like the flavor with the maple syrup, so I avoid the jarred peanut butter. BUT–for hardcore PB lovers, this is the way to go <3

Hardware (from affiliate partners)


  1. Preheat oven to 350 degrees.
  2. Mix all ingredients together with a wooden spoon, until well blended.
  3. Grease up a spoon with coconut oil and spoon a spoonful of batter onto a cookie sheet (or cookie sheet lined with parchment paper).
  4. Use the back of the spoon to flatten the dough into slightly flatter discs (a ball of dough will leave you with a partially cooked middle).
  5. Cook on the middle rack for 13 minutes or until set. They will firm up as they cool, so don’t overcook. After a few minutes, you can use the back of a fork to press the quintessential peanut butter criss-cross lines in the center.
