Bacon Kraut Tacos
This easy breakfast goes from stove to table in less than 20 minutes. Pastured bacon is incredibly rich in vitamin D and saturated fat (which supports a healthy immune system). And bacon is just plain TASTY! When paired with probiotic-rich kraut, it’s practically a match made in food heaven!
12 pieces of pastured bacon (affiliate–see my source)
½+ cup raw kraut (I love Garlic Dill Pickle Kraut by Farmhouse Culture)
diced onion, red, yellow, or white (optional)
- Cook your bacon and set aside in a warm oven.
- Remove ½ of the bacon grease and set aside.
- Dip both sides of the tortillas in bacon grease and heat until the tortilla is pliable (you may need to use some of the bacon fat you set aside). Sprinkle the warm tortillas with a little unrefined sea or Himalayan salt.
- I put 2 slices (cut in half, 4 smaller pieces) and place in the warm tortilla and top with raw kraut, onion and/or cilantro.
You paid all that money for pastured bacon, so be sure to reserve the fat for cooking later. It is nutrient-dense, delicious, and will save you money! I end up with so much bacon fat, I usually send it home with people who visit our family.
